Abstract
This study focused on evaluating the effects of argon (Ar)-enriched modified atmosphere packaging (MAP) on extending the storage life and preserving quality of ready-to-use broccoli rabe (Brassica rapa sylvestris L. var. esculenta) leaves. Two MAP conditions were tested: MAP 1 with 90% Ar and 10% O₂, and MAP 2 with 80% Ar, 10% CO₂, and 10% O₂, compared to air packaging as a control, during 9 days of cold storage at 6 °C. Results indicated that Ar-enriched MAPs effectively maintained chlorophyll content, color, total phenols, antioxidant activity, and glucosinolate levels better than air packaging, with MAP 1 showing superior control of microbial growth and sensory attributes such as odor and appearance. Weight loss and mineral content remained stable across all packaging types, while the presence of Ar appeared to reduce respiration and enzymatic degradation, thereby extending the freshness and shelf life of broccoli rabe leaves.
