The Effect of Pre- and Postharvest Calcium Gluconate Treatments on Physicochemical Characteristics and Bioactive Compounds of Sweet Cherry during Cold Storage.

Abstract

This article investigates the effects of preharvest and postharvest calcium gluconate (Ca-Glu) treatments on the physicochemical properties and bioactive compounds of sweet cherry (Prunus avium L. cv. Sweetheart) during cold storage. The study found that combined pre- and postharvest Ca-Glu applications more effectively reduced weight loss, decay rate, and respiration rate, while maintaining fruit firmness, titratable acidity, sensory quality, and stem chlorophyll content compared to single treatments or controls. Additionally, Ca-Glu treatments delayed the accumulation of total phenolic and anthocyanin contents, with preharvest and combined treatments better preserving ascorbic acid levels. These results suggest that combined Ca-Glu treatment is a promising method to extend the storage life and maintain the quality of sweet cherries during cold storage.
