Abstract
This article focuses on the extraction and encapsulation of fish oil from Basa (Pangasius bocourti) fish waste, including heads, bones, and viscera, to utilize nutritionally valuable fatty acids. The extracted oil was rich in monounsaturated fatty acids (MUFA), followed by saturated fatty acids (SFA) and polyunsaturated fatty acids (PUFA), including essential omega-3 and omega-6 fatty acids. Encapsulation using 2.5% sodium alginate with 30% oil loading via a simple extrusion process produced stable beads that enhanced the oil’s shelf life by reducing oxidation and maintaining quality for up to 12 days at room temperature. This method offers a sustainable approach to valorizing fish processing byproducts for producing value-added supplements that may help address malnutrition and reduce environmental pollution.
