The National School Lunch Program and Healthy Eating: An Analysis of Food Selection and Consumption in an Urban Title I Middle School.

Abstract

This article examines the nutritional quality of school lunches selected and consumed by sixth-grade students participating in the National School Lunch Program (NSLP) at a Title I middle school in a large U.S. city. Using direct, real-time observation of 141 randomly selected lunches, the study found that while school lunches generally meet federal nutritional standards when offered, the foods students select and consume are low in essential nutrients and high in sugar, with actual consumption showing even poorer nutritional outcomes due to food waste. Notably, milk and nutrient-dense items were frequently discarded, whereas high-sugar items were more consistently consumed. The findings highlight the need for school-based interventions and further research to improve healthy eating behaviors among low-income urban students receiving NSLP meals.
