Abstract
This article focuses on the isolation and characterization of Levilactobacillus brevis LAB42, a lactic acid bacterium exhibiting high purine nucleosidase (PNase) activity, which is relevant for degrading purine nucleosides linked to hyperuricemia and gout risk. Among 72 isolated strains from fermented foods and environmental sources, L. brevis LAB42 showed superior PNase activity, acid and bile resistance, and strong adhesion to intestinal Caco-2 cells, indicating probiotic potential. The study further demonstrated that LAB42 maintains PNase activity during milk fermentation and that its viability can be preserved effectively using yeast extract as a cryoprotectant. These findings suggest that L. brevis LAB42, with appropriate additives, could serve as a functional starter culture for milk fermentation with potential health benefits related to purine metabolism.
