Abstract
The category of tortillas has shown a strong growth trend, not only in the United States, but also in other nations around the world. To keep up with the demand for these products, tortilla manufacturers have had to apply several scientific principles to build and to maintain the trust of the consumers in their specific brands. We will call these scientific principles answers, and yet there are still more questions that need to be answered in order to fully understand and control the production process.
