Abstract
This article investigates the hydrodynamics of pour-over coffee brewing, focusing on how a laminar water jet interacts with a granular bed of coffee grounds to influence extraction efficiency. Using transparent silica gel particles as a model and high-speed imaging with laser sheets, the study reveals that higher pour heights increase granular agitation through avalanche dynamics, enhancing mixing without being significantly affected by floating granular layers. Experiments with real coffee grounds confirm that stronger brews, measured by total dissolved solids (TDS), correlate with higher pour heights and slower flow rates, suggesting that adjusting pour parameters can improve extraction efficiency and reduce coffee bean usage. These findings have broader implications for understanding erosion processes in environmental and engineering contexts, such as dam scouring and waterfall-induced soil erosion.
