Abstract
Saffron, the most expensive spice in the world, is vulnerable to adulteration due to the labor-intensive process of hand-harvesting and processing it requires. New research in Iran has evaluated the environmental and climate factors that impact saffron yield, while researchers in North America are studying how to grow saffron in atypical climates. Factors such as temperature, soil texture, field age, and irrigation frequency have been found to influence saffron yield. In the United States, saffron cultivation is being explored as a way for small, diversified farmers to diversify their crops, and there is potential for saffron to be grown in various regions across the country.
