Abstract
This article examines the production and variety of daily bread available in Al Ain, United Arab Emirates, around the year 2000, focusing primarily on small neighborhood bakeries specializing in khubz flatbread. It categorizes bread sources into three types: artisanal neighborhood bakeries with simple, manual operations; medium-sized "Automatic" or "Modern" bakeries offering a wider range of bread and sweets including manakish and Ramadan specialties like ataif; and supermarkets selling industrially produced breads, often Western-style. The article also highlights the presence of immigrant breads reflecting the diverse population, as well as traditional baked sweets from various Middle Eastern and North African cuisines. The study provides detailed descriptions of bakery practices, oven types, bread varieties, and cultural food customs related to bread consumption in Al Ain at the turn of the century.
