Abstract
The article focuses on the Holys’ expansion of their maple syrup business in Montville, Ohio, into the whiskey industry with the launch of Seldom Seen Whiskey Company. Kevin and Morgan Holy, owners of Seldom Seen Farm, produce bourbon-barrel-aged maple syrup and have recently introduced their first batch of maple rye whiskey, which is finished in barrels previously used for their syrup. They also produce a maple distillate from low-grade maple syrup, expected to be released in fall 2027. The farm features a renovated storefront and bottling facility, hosting pancake breakfasts where customers can sample and purchase their products.
