Combination of flaxseed and clarified tomato juice in bread: Delayed effect on metabolic disorders during long-term unbalanced diet in an in vivo experiment.

Abstract

This article focuses on evaluating the biological effects of regular consumption of bread enriched with flaxseed and clarified tomato juice in rabbits, used as a model for human metabolic processes. The study found that replacing water with clarified tomato juice in bread reduced cholesterol and creatinine levels, while adding flaxseed soaked in water lowered bilirubin and transaminase levels, indicating protective effects against nonalcoholic fatty liver disease (NAFLD). Rabbits fed bread containing both flaxseed and clarified tomato juice showed improved liver morphology, reduced fat accumulation, and better metabolic profiles compared to control groups. The findings suggest that incorporating flaxseed and clarified tomato juice into bread may mitigate metabolic imbalances associated with high carbohydrate intake, though the authors note limitations due to small sample sizes and recommend further research in humans.
