Physicochemical, thermal and in vitro digestion characteristics of cricket‐ (Acheta domesticus) substituted corn tortillas.

Abstract
This article investigates the effects of substituting nixtamalised corn flour (NCF) with cricket powder from Acheta domesticus (AD) on the chemical, nutritional, and digestibility properties of corn tortillas. Tortillas with 5%, 7.5%, and 10% AD substitution showed increased protein, lipid, fiber, and resistant starch content, alongside a significant reduction in rapidly digestible starch and predicted glycaemic index. The formation of amylose–lipid complexes (resistant starch type V) was confirmed, correlating strongly with AD levels, which also enhanced in vitro protein digestibility and influenced tortilla texture and thermal properties. These findings suggest that AD powder can improve the nutritional profile of corn tortillas and may contribute to developing lower glycaemic index foods, though higher substitution levels may affect tortilla quality.
